Banana Bread W/White Chocolate Chips
Today's adventure was banana bread w/white chocolate chips. I also added vanilla to the recipe and I must say that it turned out delicious! The recipe I used was from my Better Homes & Garden cookbook:
2 c all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
2 eggs (beaten)
1 1/2 c mashed ripe banana (I used two frozen ones and ended up with the right amount)
1 c sugar
1/2 c cooking oil
*added ingredients
1 teaspoon vanilla extract
2 handfuls of white chocolate chips (approx. 3/4 cup)
Preheat oven to 350 degrees. Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg in large bowl. Make a well in center of flour mixture and set aside.
Mix eggs, banana, sugar, oil, and vanilla in medium bowl. Add egg mixture all at once to flour mixture. Stir until just moistened. Mix in chocolate chips. Spoon batter into greased 9x5x3 inch loaf pan.
Bake for 60 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan and cool completely on rack. Wrap to store.
